Creamy Palabok

Ingredients
- rice noodles (palabok noodles), cooked
- 1/4 cup oil
- 1/2 pound ground pork
- 1 tablespoon fish sauce
- 1 packet (8 g) Magic Sarap seasoning
- 2 packs (250 ml each) all-purpose cream
- 8 pieces poached shrimp
- 1 cup fried tofu, cubed
- 2 tablespoons fried garlic bits
- 1 cup smoked fish (tinapa) flakes
- 1 cup crushed chicharon (pork cracklings)
- 1/4 cup chopped green onions
- 4 hardboiled eggs, peeled and quartered
- calamansi, for serving
Steps
- Cook noodles in boiling water according to package directions, then drain well.
- Heat oil with annatto seeds until color is extracted, then discard the seeds.
- Cook ground pork in the annatto oil until lightly browned, breaking it apart with a spoon.
- Season with fish sauce and Magic Sarap, stirring to combine.
- Add the all-purpose cream and simmer until the pork is fully cooked and the sauce slightly thickens.
- Arrange noodles on a serving platter and spoon the palabok sauce on top.
- Garnish with shrimp, tofu, tinapa flakes, crushed chicharon, garlic bits, green onions, and hardboiled eggs.
- Serve with calamansi on the side.
