Shredded Beef Quesadillas

Ingredients
- 1½ lb beef hind shank
- 1 lb beef marrow bones (optional)
- ½ white onion
- 2 garlic cloves
- 1 bay leaf
- salt, to taste
- 1½ cups corn masa harina
- 1¼ cups water
- ½ cup shredded Oaxaca cheese
- 1 cup shredded lettuce
- 8 tablespoons queso fresco or Cotija cheese
- 4 tablespoons Mexican table cream
Steps
- Place the meat and bones (if using) in a pot with the onion, garlic, and bay leaf. Cover with 2 cups of water and cook until the meat is tender (about 30 minutes in an Instant Pot).
- Let the meat cool, then shred it. Discard the bones, mix the marrow into the meat, season with salt, and set aside.
- Mix the masa harina with the water to form a soft dough, adding more water if needed. Divide into 4 large balls.
- Roll each ball into a log, then press between two plastic sheets using a tortilla press or glass pie dish to form a large oblong tortilla.
- Cook each tortilla on a preheated griddle, turning twice until cooked through.
- Stuff the cooked tortilla with shredded cheese and meat, then top with lettuce, cream, and additional cheese.
Notes
Requires two large plastic sheets for pressing the masa dough into tortillas.
