Orejas (Mexican Pan Dulce Palmiers)

Ingredients
- 1 package (17.3 oz) puff pastry, 2 sheets, thawed
- 2 tbsp all-purpose flour, for dusting
- 2 tbsp softened butter
- 1 1/4 cups granulated sugar, divided
Steps
- Thaw the puff pastry sheets according to package instructions.
- Dust a clean work surface with flour.
- Unfold the first pastry sheet, spread with half the softened butter, and sprinkle with sugar.
- Place the second pastry sheet on top of the first.
- Spread the remaining butter over the top sheet and sprinkle with more sugar.
- Fold both long sides of the pastry toward the center, then fold again to close like a book.
- Press a groove down the center of the folded pastry using a rolling pin or the back of a knife.
- Slice the pastry crosswise into strips about 1/2 inch thick, coating both cut sides in sugar.
- Let the sliced pieces rest for about 10-15 minutes before baking.
- Bake in a preheated oven at 375°F (190°C) until golden brown and caramelized, flipping halfway through if needed.
- Let cool slightly on a wire rack before serving.
