Orejas (Mexican Pan Dulce Palmiers)

Ingredients

  • 1 package (17.3 oz) puff pastry, 2 sheets, thawed
  • 2 tbsp all-purpose flour, for dusting
  • 2 tbsp softened butter
  • 1 1/4 cups granulated sugar, divided

Steps

  1. Thaw the puff pastry sheets according to package instructions.
  2. Dust a clean work surface with flour.
  3. Unfold the first pastry sheet, spread with half the softened butter, and sprinkle with sugar.
  4. Place the second pastry sheet on top of the first.
  5. Spread the remaining butter over the top sheet and sprinkle with more sugar.
  6. Fold both long sides of the pastry toward the center, then fold again to close like a book.
  7. Press a groove down the center of the folded pastry using a rolling pin or the back of a knife.
  8. Slice the pastry crosswise into strips about 1/2 inch thick, coating both cut sides in sugar.
  9. Let the sliced pieces rest for about 10-15 minutes before baking.
  10. Bake in a preheated oven at 375°F (190°C) until golden brown and caramelized, flipping halfway through if needed.
  11. Let cool slightly on a wire rack before serving.
