Pescado Empanizado (Breaded Fish Fillet)

Ingredients

  • 2.5 lbs tilapia fillets
  • 1 tbsp fresh lime juice
  • 2 eggs
  • 2 cups bread crumbs (or crushed saltines)
  • 3/4 cup vegetable oil
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • Salt and black pepper
  • Lime wedges, for serving
  • White rice, for serving
  • Corn tortillas, for serving
  • Salsa, for serving

Steps

  1. Pat the fish fillets dry, then sprinkle with lime juice and season with salt, black pepper, onion powder, and garlic powder.
  2. Beat the eggs in a large bowl and dip each fillet into the eggs.
  3. Spread the bread crumbs on a shallow dish.
  4. Coat each egg-dipped fillet in the bread crumbs, turning to cover both sides, then press gently so the crumbs adhere.
  5. Place breaded fillets on a clean plate and repeat with the remaining fish.
  6. Heat the oil in a large skillet over medium-high heat.
  7. Line a plate with paper towels for draining the fried fish.
  8. Fry the fillets 2-3 at a time, without overcrowding the pan, for 3-4 minutes per side until golden brown.
  9. Transfer fried fillets to the paper towel-lined plate to drain excess oil.
  10. Serve with rice, lime wedges, corn tortillas, and salsa.
