Pescado Empanizado (Breaded Fish Fillet)

Ingredients
- 2.5 lbs tilapia fillets
- 1 tbsp fresh lime juice
- 2 eggs
- 2 cups bread crumbs (or crushed saltines)
- 3/4 cup vegetable oil
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- Salt and black pepper
- Lime wedges, for serving
- White rice, for serving
- Corn tortillas, for serving
- Salsa, for serving
Steps
- Pat the fish fillets dry, then sprinkle with lime juice and season with salt, black pepper, onion powder, and garlic powder.
- Beat the eggs in a large bowl and dip each fillet into the eggs.
- Spread the bread crumbs on a shallow dish.
- Coat each egg-dipped fillet in the bread crumbs, turning to cover both sides, then press gently so the crumbs adhere.
- Place breaded fillets on a clean plate and repeat with the remaining fish.
- Heat the oil in a large skillet over medium-high heat.
- Line a plate with paper towels for draining the fried fish.
- Fry the fillets 2-3 at a time, without overcrowding the pan, for 3-4 minutes per side until golden brown.
- Transfer fried fillets to the paper towel-lined plate to drain excess oil.
- Serve with rice, lime wedges, corn tortillas, and salsa.
