Cajun Salmon Sheet Pan with Green Beans and Potatoes

Ingredients

  • 1-2 teaspoons minced garlic
  • 2-3 tablespoons fresh herbs (thyme, parsley, basil)
  • 1 tablespoon Cajun/Creole seasoning
  • 1/4 cup canola oil
  • 2-3 salmon fillets (4-6 oz each), room temperature
  • salt and pepper, to taste
  • 1 pound green beans
  • 1 cup cherry tomatoes
  • baby potatoes

Steps

  1. Cut baby potatoes in half, place in a large pot, cover with water, and season with salt.
  2. Bring to a boil and cook until fork tender. Drain and let sit in the pot for 2-3 minutes to remove excess moisture. Set aside.
  3. In a small bowl, combine garlic, herbs, Cajun/Creole seasoning, and canola oil; mix thoroughly.
  4. Season salmon fillets with salt and pepper, then brush with the spice mixture. Set aside.
  5. Coat the tomatoes, green beans, and cooked potatoes with the remaining Cajun spice mixture.
  6. Preheat oven to 400°F. Line a baking sheet with foil or parchment paper and lightly oil it.
  7. Arrange the seasoned salmon, tomatoes, potatoes, and green beans on the prepared sheet pan.
  8. Bake for 15-18 minutes, or until the salmon is cooked through and vegetables are tender.
