Shrimp Ceviche

Ingredients
- 1.5 lb raw shrimp, peeled, deveined, and cut into 1/2-inch pieces
- 1/2 cup fresh lime juice
- 1 tsp salt
- 2 large plum tomatoes, finely chopped (about 2 cups)
- 2 serrano peppers, finely chopped (or 1 large jalapeño)
- 1 cup chopped red or white onion
- 1/2 cup finely chopped cilantro
- 1 avocado, diced
- 1/4 cup olive oil
- Saltine crackers, corn tostadas, or tortilla chips, for serving
- Ketchup, optional
- Tabasco sauce, optional
Steps
- Clean, devein, and chop the shrimp into 1/2-inch pieces.
- Place shrimp, lime juice, and salt in a large bowl. Cover and marinate in the fridge for 30 minutes to 2 hours, until shrimp turns opaque pink-orange.
- Drain most of the lime juice, leaving a couple of tablespoons in the bowl to keep the shrimp moist.
- Stir in the chopped tomatoes, peppers, onion, and cilantro. Season with more salt if needed. Marinate in the fridge for another 10 minutes.
- Spoon the ceviche into cocktail glasses or small bowls. Garnish with diced avocado and a drizzle of olive oil.
- Serve with saltine crackers, tostadas, or tortilla chips.
