Shrimp Ceviche

Ingredients

  • 1.5 lb raw shrimp, peeled, deveined, and cut into 1/2-inch pieces
  • 1/2 cup fresh lime juice
  • 1 tsp salt
  • 2 large plum tomatoes, finely chopped (about 2 cups)
  • 2 serrano peppers, finely chopped (or 1 large jalapeño)
  • 1 cup chopped red or white onion
  • 1/2 cup finely chopped cilantro
  • 1 avocado, diced
  • 1/4 cup olive oil
  • Saltine crackers, corn tostadas, or tortilla chips, for serving
  • Ketchup, optional
  • Tabasco sauce, optional

Steps

  1. Clean, devein, and chop the shrimp into 1/2-inch pieces.
  2. Place shrimp, lime juice, and salt in a large bowl. Cover and marinate in the fridge for 30 minutes to 2 hours, until shrimp turns opaque pink-orange.
  3. Drain most of the lime juice, leaving a couple of tablespoons in the bowl to keep the shrimp moist.
  4. Stir in the chopped tomatoes, peppers, onion, and cilantro. Season with more salt if needed. Marinate in the fridge for another 10 minutes.
  5. Spoon the ceviche into cocktail glasses or small bowls. Garnish with diced avocado and a drizzle of olive oil.
  6. Serve with saltine crackers, tostadas, or tortilla chips.
