Baja Fish Tacos

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 tsp dried Mexican oregano
- Salt, to taste
- Black pepper, to taste
- 1/3 tsp garlic powder
- 1 1/2 cups vegetable oil, for frying
- 1 lb fish fillet (cod, halibut, tilapia, or red snapper)
- 8 corn tortillas
- Pico de gallo, for serving
- Creamy chipotle sauce, for serving
- Spicy salsa, for serving
- 1 1/2 cups finely shredded cabbage
- Lime wedges, for serving
Steps
- In a bowl, mix the flour, oregano, garlic powder, salt, and pepper.
- Add water or beer gradually to the dry mix, whisking until a smooth batter forms.
- Cut the fish fillets into strips and pat dry.
- Heat the vegetable oil in a deep skillet or pot to about 350°F (175°C).
- Dip each fish strip into the batter, coating evenly.
- Fry the battered fish in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove fried fish and drain on paper towels.
- Warm the corn tortillas on a griddle or skillet.
- Assemble tacos by placing fried fish on each tortilla.
- Top with shredded cabbage, pico de gallo, and chipotle sauce.
- Serve with spicy salsa and lime wedges on the side.
