Baja Fish Tacos

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp dried Mexican oregano
  • Salt, to taste
  • Black pepper, to taste
  • 1/3 tsp garlic powder
  • 1 1/2 cups vegetable oil, for frying
  • 1 lb fish fillet (cod, halibut, tilapia, or red snapper)
  • 8 corn tortillas
  • Pico de gallo, for serving
  • Creamy chipotle sauce, for serving
  • Spicy salsa, for serving
  • 1 1/2 cups finely shredded cabbage
  • Lime wedges, for serving

Steps

  1. In a bowl, mix the flour, oregano, garlic powder, salt, and pepper.
  2. Add water or beer gradually to the dry mix, whisking until a smooth batter forms.
  3. Cut the fish fillets into strips and pat dry.
  4. Heat the vegetable oil in a deep skillet or pot to about 350°F (175°C).
  5. Dip each fish strip into the batter, coating evenly.
  6. Fry the battered fish in batches until golden brown and crispy, about 3-4 minutes per side.
  7. Remove fried fish and drain on paper towels.
  8. Warm the corn tortillas on a griddle or skillet.
  9. Assemble tacos by placing fried fish on each tortilla.
  10. Top with shredded cabbage, pico de gallo, and chipotle sauce.
  11. Serve with spicy salsa and lime wedges on the side.
