Mayocoba Beans

Ingredients
- 1 lb Mayocoba beans
- 8 cups water
- 1/4 white onion
- 1 garlic clove
- salt, to taste
- black pepper, to taste
- 1 tbsp lard or olive oil
Steps
- Rinse the beans and remove any debris or damaged beans.
- Soak the beans in water for several hours or overnight, then drain.
- Place the soaked beans in a pot with 8 cups of water, the onion, and garlic clove.
- Bring to a boil, then reduce heat and simmer until beans are tender, about 1 to 1.5 hours, adding more water if needed.
- Season with salt and pepper to taste, and stir in the lard or olive oil.
- Alternatively, cook the beans in a pressure cooker or Instant Pot with the same ingredients until tender, following the manufacturer's cooking time guidelines.
