Mayocoba Beans

Ingredients

  • 1 lb Mayocoba beans
  • 8 cups water
  • 1/4 white onion
  • 1 garlic clove
  • salt, to taste
  • black pepper, to taste
  • 1 tbsp lard or olive oil

Steps

  1. Rinse the beans and remove any debris or damaged beans.
  2. Soak the beans in water for several hours or overnight, then drain.
  3. Place the soaked beans in a pot with 8 cups of water, the onion, and garlic clove.
  4. Bring to a boil, then reduce heat and simmer until beans are tender, about 1 to 1.5 hours, adding more water if needed.
  5. Season with salt and pepper to taste, and stir in the lard or olive oil.
  6. Alternatively, cook the beans in a pressure cooker or Instant Pot with the same ingredients until tender, following the manufacturer's cooking time guidelines.
