Bisquets (Mexican Biscuits)

Ingredients
- 1/4 cup milk (whole or 2%)
- 2 tsp instant yeast
- 2 cups all-purpose flour
- 3 tsp baking powder
- 1/2 cup sugar
- 1/2 tsp salt
- 3/4 cup butter, salted or unsalted
- 2 large eggs, divided
- 1 tsp vanilla extract
Steps
- Warm the milk slightly and dissolve the instant yeast in it; let sit until foamy.
- In a large bowl, mix the flour, baking powder, sugar, and salt.
- Cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Add the yeast-milk mixture, 1 egg, and vanilla extract; mix until a soft dough forms.
- Knead the dough briefly until smooth, then let it rest until slightly puffed.
- Preheat the oven to 350°F (175°C).
- Divide the dough into 6 equal portions and shape into rounds.
- Place the shaped biscuits on a baking sheet, brush with the remaining beaten egg.
- Bake for about 12 minutes, until golden brown on top.
