Bisquets (Mexican Biscuits)

Ingredients

  • 1/4 cup milk (whole or 2%)
  • 2 tsp instant yeast
  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 3/4 cup butter, salted or unsalted
  • 2 large eggs, divided
  • 1 tsp vanilla extract

Steps

  1. Warm the milk slightly and dissolve the instant yeast in it; let sit until foamy.
  2. In a large bowl, mix the flour, baking powder, sugar, and salt.
  3. Cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Add the yeast-milk mixture, 1 egg, and vanilla extract; mix until a soft dough forms.
  5. Knead the dough briefly until smooth, then let it rest until slightly puffed.
  6. Preheat the oven to 350°F (175°C).
  7. Divide the dough into 6 equal portions and shape into rounds.
  8. Place the shaped biscuits on a baking sheet, brush with the remaining beaten egg.
  9. Bake for about 12 minutes, until golden brown on top.
