Ingredients
- 2½ pounds baking apples, peeled, cored, and sliced
- 2 tablespoons lemon juice
- 3 tablespoons unsalted butter

- â…“ cup brown sugar
- 1½ teaspoons ground cinnamon
- ¼-½ teaspoon ground nutmeg
- 1½ tablespoons cornstarch
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ¼ cup sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, cut into small cubes
- 1 cup buttermilk
- 1 tablespoon crystallized ginger, finely chopped
Steps
- Preheat oven to 375°F (190°C).
- In a large skillet, melt 3 tablespoons butter over medium heat.
- Add sliced apples and lemon juice, and cook for a few minutes until slightly softened.
- Stir in granulated sugar, brown sugar, cinnamon, and nutmeg; cook until sugar dissolves.
- Mix cornstarch with a little water to form a slurry, then stir into the apple mixture along with vanilla extract; cook until thickened.
- Transfer the apple filling to a greased baking dish.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Cut in the cold cubed butter until the mixture resembles coarse crumbs.
- Stir in buttermilk and crystallized ginger just until combined to form a soft biscuit dough.
- Drop spoonfuls of the biscuit dough evenly over the apple filling.
- Bake for 35-40 minutes, until the topping is golden brown and the filling is bubbling.
- Let cool slightly before serving.
