Apple Cobbler

Ingredients

  • 2½ pounds baking apples, peeled, cored, and sliced
  • 2 tablespoons lemon juice
  • 3 tablespoons unsalted butter
  • â…“ cup granulated sugar
  • â…“ cup brown sugar
  • 1½ teaspoons ground cinnamon
  • ¼-½ teaspoon ground nutmeg
  • 1½ tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, cut into small cubes
  • 1 cup buttermilk
  • 1 tablespoon crystallized ginger, finely chopped

Steps

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, melt 3 tablespoons butter over medium heat.
  3. Add sliced apples and lemon juice, and cook for a few minutes until slightly softened.
  4. Stir in granulated sugar, brown sugar, cinnamon, and nutmeg; cook until sugar dissolves.
  5. Mix cornstarch with a little water to form a slurry, then stir into the apple mixture along with vanilla extract; cook until thickened.
  6. Transfer the apple filling to a greased baking dish.
  7. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  8. Cut in the cold cubed butter until the mixture resembles coarse crumbs.
  9. Stir in buttermilk and crystallized ginger just until combined to form a soft biscuit dough.
  10. Drop spoonfuls of the biscuit dough evenly over the apple filling.
  11. Bake for 35-40 minutes, until the topping is golden brown and the filling is bubbling.
  12. Let cool slightly before serving.
