Marranitos (Mexican Pig-Shaped Pan Dulce)

Ingredients
- 12 oz piloncillo, chopped
- 1 cup water
- 1 stick Mexican cinnamon
- 2 cloves
- 1 tsp anise seed
- 4 oz vegetable shortening
- 4 cups all-purpose flour (240 grams)
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 egg, beaten
Steps
- In a saucepan, combine the piloncillo, water, cinnamon stick, cloves, and anise seed. Bring to a boil, then simmer until the piloncillo dissolves completely.
- Strain the syrup and let it cool to room temperature.
- In a large bowl, mix the flour, baking powder, and baking soda.
- Add the shortening and mix until the mixture resembles coarse crumbs.
- Pour in the cooled piloncillo syrup and mix until a smooth dough forms. Knead briefly on a floured surface.
- Divide the dough into 12 equal pieces.
- Shape each piece into a pig shape, using small scraps of dough for ears and a snout, and a knife to score details.
- Place the shaped pigs on a baking sheet lined with parchment paper.
- Brush the tops with beaten egg.
- Bake at 350°F (175°C) for about 15 minutes, or until golden brown.
- Let cool before serving.
