Ensalada Navideña (Mexican Christmas Fruit Salad)

Ingredients
- 14 oz sour cream
- 14 oz sweetened condensed milk
- 1 cup Greek yogurt
- 8 oz cream cheese
- 15.25 oz can peaches or fruit cocktail in syrup, liquid reserved
- 2 red apples, cubed
- 1 green apple, cubed
- 1/2 lb red seedless grapes, halved
- 1/2 lb green seedless grapes, halved
- 1/2 lb strawberries, halved
- 1 cup sweetened shredded coconut, divided
- 1 cup pecans, halved and toasted
- 1 lime, juiced
- 1 cup mini marshmallows (optional)
- 1/2 cup maraschino cherries, for decoration (optional)
Steps
- In a blender, combine the sweetened condensed milk, sour cream, yogurt, cream cheese, and reserved fruit can liquid until smooth. Set aside.
- Cut the apples into small cubes and toss with lime juice to prevent browning.
- Toast the pecans in a dry frying pan for 1-2 minutes, tossing frequently to prevent burning.
- In a large mixing bowl, combine the peaches, apples, grapes, strawberries, half the coconut, pecans, and marshmallows (if using).
- Pour the creamy mixture over the fruit and mix well.
- Sprinkle the remaining coconut and maraschino cherries on top. Serve chilled.
