Ensalada Navideña (Mexican Christmas Fruit Salad)

Ingredients

  • 14 oz sour cream
  • 14 oz sweetened condensed milk
  • 1 cup Greek yogurt
  • 8 oz cream cheese
  • 15.25 oz can peaches or fruit cocktail in syrup, liquid reserved
  • 2 red apples, cubed
  • 1 green apple, cubed
  • 1/2 lb red seedless grapes, halved
  • 1/2 lb green seedless grapes, halved
  • 1/2 lb strawberries, halved
  • 1 cup sweetened shredded coconut, divided
  • 1 cup pecans, halved and toasted
  • 1 lime, juiced
  • 1 cup mini marshmallows (optional)
  • 1/2 cup maraschino cherries, for decoration (optional)

Steps

  1. In a blender, combine the sweetened condensed milk, sour cream, yogurt, cream cheese, and reserved fruit can liquid until smooth. Set aside.
  2. Cut the apples into small cubes and toss with lime juice to prevent browning.
  3. Toast the pecans in a dry frying pan for 1-2 minutes, tossing frequently to prevent burning.
  4. In a large mixing bowl, combine the peaches, apples, grapes, strawberries, half the coconut, pecans, and marshmallows (if using).
  5. Pour the creamy mixture over the fruit and mix well.
  6. Sprinkle the remaining coconut and maraschino cherries on top. Serve chilled.
