Aguachile

Ingredients
- 1 lb large raw shrimp, peeled, deveined, and butterflied
- 1/2 cup fresh lime juice
- 1/3 cup chopped fresh cilantro
- 2 serrano peppers, stems removed, roughly chopped (seeded for less heat)
- 1/3 cucumber, peeled, seeded, and chopped
- 1 clove garlic
- Salt and black pepper, to taste
- 2 tbsp chopped red onion
- 3/4 cucumber, peeled, seeded, and sliced
- 1 1/2 oz red onion, thinly sliced (about 1/3 medium onion)
- 1 serrano pepper, thinly sliced
- 1 medium avocado, sliced
- Tostadas, corn tortillas, or tortilla chips, for serving (optional)
Steps
- Arrange the shrimp in a single layer in a shallow dish.
- In a blender, combine lime juice, cilantro, chopped serrano peppers, chopped cucumber, garlic, salt, and black pepper. Blend until smooth to make the marinade.
- Pour the marinade over the shrimp, making sure they are well coated. Let marinate in the refrigerator for about 15 minutes, or until the shrimp turn opaque.
- Top the marinated shrimp with sliced cucumber, sliced red onion, sliced serrano pepper, and avocado slices.
- Serve immediately, chilled, with tostadas, corn tortillas, or tortilla chips.
Notes
Do not marinate the shrimp too long, as the lime juice will continue to 'cook' them and can make them tough.
