Cabbage Soup

Ingredients

  • 2 tbsp vegetable oil or olive oil
  • 3/4 cup diced carrot (1 medium carrot)
  • 1 cup diced Yukon Gold potato (1 medium potato)
  • 1/2 cup diced white onion
  • 6 cups sliced green cabbage (about 1 pound)
  • 2 medium tomatoes, chopped
  • 1 large garlic clove, chopped
  • 6 cups chicken broth or vegetable broth
  • 1 tsp dried thyme
  • Salt and black pepper, to taste

Steps

  1. Heat oil in a large pot over medium heat. Add carrots and sauté 2 minutes.
  2. Add potatoes and cook 2 minutes, stirring to prevent sticking. Add onion and cook another 2 minutes until translucent.
  3. Add cabbage, stir well, cover, and cook about 4 minutes until softened.
  4. Meanwhile, blend chopped tomatoes and garlic until smooth; set aside.
  5. Uncover pot, stir cabbage, and continue cooking 4 more minutes until wilted.
  6. Pour in the tomato mixture and chicken broth. Stir and bring to a gentle simmer.
  7. Add dried thyme, crushing between fingers as you add it. Season with salt and pepper.
  8. Simmer for about 10 more minutes to let flavors combine.
  9. Serve warm.
