Cabbage Soup

Ingredients
- 2 tbsp vegetable oil or olive oil
- 3/4 cup diced carrot (1 medium carrot)
- 1 cup diced Yukon Gold potato (1 medium potato)
- 1/2 cup diced white onion
- 6 cups sliced green cabbage (about 1 pound)
- 2 medium tomatoes, chopped
- 1 large garlic clove, chopped
- 6 cups chicken broth or vegetable broth
- 1 tsp dried thyme
- Salt and black pepper, to taste
Steps
- Heat oil in a large pot over medium heat. Add carrots and sauté 2 minutes.
- Add potatoes and cook 2 minutes, stirring to prevent sticking. Add onion and cook another 2 minutes until translucent.
- Add cabbage, stir well, cover, and cook about 4 minutes until softened.
- Meanwhile, blend chopped tomatoes and garlic until smooth; set aside.
- Uncover pot, stir cabbage, and continue cooking 4 more minutes until wilted.
- Pour in the tomato mixture and chicken broth. Stir and bring to a gentle simmer.
- Add dried thyme, crushing between fingers as you add it. Season with salt and pepper.
- Simmer for about 10 more minutes to let flavors combine.
- Serve warm.
