Papas con Chorizo

Ingredients
- 1.5 lbs potatoes, peeled and cut into 1/2-inch cubes
- 2 tablespoons vegetable oil, or more as needed
- 10 oz Mexican chorizo, casings removed
- 1/3 cup white onion, finely diced (optional)
- Salt
- Warm corn or flour tortillas, to serve
- Spicy salsa or fresh serrano pepper, finely chopped, to serve
Steps
- Place potatoes in a saucepan and cover with water. Bring to a boil and cook over medium heat for 8-10 minutes until tender but not fully cooked.
- Drain the potatoes and set aside.
- While potatoes cook, heat oil in a frying pan over medium heat.
- Remove casings from chorizo, crumble it, and add to the pan. Cook, stirring often, for about 8 minutes until fat is released.
- Stir in the potatoes and onion, if using, and combine so the chorizo flavors coat the potatoes.
- Add more oil if needed to finish cooking the potatoes without sticking.
- Season with salt and serve with warm tortillas and salsa or chopped serrano pepper.
