Papas con Chorizo

Ingredients

  • 1.5 lbs potatoes, peeled and cut into 1/2-inch cubes
  • 2 tablespoons vegetable oil, or more as needed
  • 10 oz Mexican chorizo, casings removed
  • 1/3 cup white onion, finely diced (optional)
  • Salt
  • Warm corn or flour tortillas, to serve
  • Spicy salsa or fresh serrano pepper, finely chopped, to serve

Steps

  1. Place potatoes in a saucepan and cover with water. Bring to a boil and cook over medium heat for 8-10 minutes until tender but not fully cooked.
  2. Drain the potatoes and set aside.
  3. While potatoes cook, heat oil in a frying pan over medium heat.
  4. Remove casings from chorizo, crumble it, and add to the pan. Cook, stirring often, for about 8 minutes until fat is released.
  5. Stir in the potatoes and onion, if using, and combine so the chorizo flavors coat the potatoes.
  6. Add more oil if needed to finish cooking the potatoes without sticking.
  7. Season with salt and serve with warm tortillas and salsa or chopped serrano pepper.
