Black Bean Tostadas

Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 cup white onion, diced
  • 2 cans black beans
  • 2 epazote leaves (optional)
  • Salt, to taste
  • 8 corn tortillas
  • 1 cup vegetable oil, for frying tortillas
  • 2 cups shredded lettuce
  • 1 cup crumbled queso fresco
  • 1/2 cup Mexican cream or sour cream

Steps

  1. Heat 1 tablespoon of oil in a pan and sauté the diced onion until soft.
  2. Add the black beans and epazote leaves, season with salt, and simmer for a few minutes.
  3. Mash the beans to a creamy consistency and set aside.
  4. Heat 1 cup of vegetable oil in a skillet and fry the corn tortillas until crisp and golden, then drain on paper towels.
  5. Spread a layer of the mashed black beans over each fried tortilla.
  6. Top with shredded lettuce, crumbled queso fresco, and a drizzle of Mexican cream or sour cream.
  7. Serve immediately.

Notes

Canned black beans can be substituted with homemade cooked black beans. Tostadas are best served fresh, as fried tortillas soften quickly.
