Black Bean Tostadas

Ingredients
- 1 tablespoon vegetable oil
- 1/2 cup white onion, diced
- 2 cans black beans
- 2 epazote leaves (optional)
- Salt, to taste
- 8 corn tortillas
- 1 cup vegetable oil, for frying tortillas
- 2 cups shredded lettuce
- 1 cup crumbled queso fresco
- 1/2 cup Mexican cream or sour cream
Steps
- Heat 1 tablespoon of oil in a pan and sauté the diced onion until soft.
- Add the black beans and epazote leaves, season with salt, and simmer for a few minutes.
- Mash the beans to a creamy consistency and set aside.
- Heat 1 cup of vegetable oil in a skillet and fry the corn tortillas until crisp and golden, then drain on paper towels.
- Spread a layer of the mashed black beans over each fried tortilla.
- Top with shredded lettuce, crumbled queso fresco, and a drizzle of Mexican cream or sour cream.
- Serve immediately.
Notes
Canned black beans can be substituted with homemade cooked black beans. Tostadas are best served fresh, as fried tortillas soften quickly.
