Ingredients
- 2 cups masa harina
- 1 1/2 cups warm water
- 1/4 tsp salt
- 4 beef chuck steaks (about 1 1/2 pounds total)
- 1/2 tsp garlic powder
- salt and black pepper, to taste
- 4 tbsp lard or oil
- 1 cup refried black beans, warmed
- 2 cups shredded romaine lettuce
- 1 large plum tomato, sliced
- 1/2 cup queso fresco, crumbled
- 1/3 cup Mexican crema
- 1/3 white onion, sliced into rings
- 1 avocado, sliced
- red salsa, to serve
Steps
- Mix masa harina, warm water, and salt together to form a smooth dough.
- Divide the dough into portions and shape each into an oval, flattening to form the huarache base.
- Cook the masa ovals on a hot griddle or comal until lightly browned and cooked through on both sides.
- Season the beef steaks with garlic powder, salt, and pepper.
- Cook the steaks in lard or oil in a skillet until browned and cooked to desired doneness, then slice or chop.
- Spread warm refried beans over each cooked masa base.
- Top with the cooked beef, shredded lettuce, tomato slices, onion rings, queso fresco, and Mexican crema.
- Add avocado slices and top with red salsa before serving.
