Huaraches

Ingredients

  • 2 cups masa harina
  • 1 1/2 cups warm water
  • 1/4 tsp salt
  • 4 beef chuck steaks (about 1 1/2 pounds total)
  • 1/2 tsp garlic powder
  • salt and black pepper, to taste
  • 4 tbsp lard or oil
  • 1 cup refried black beans, warmed
  • 2 cups shredded romaine lettuce
  • 1 large plum tomato, sliced
  • 1/2 cup queso fresco, crumbled
  • 1/3 cup Mexican crema
  • 1/3 white onion, sliced into rings
  • 1 avocado, sliced
  • red salsa, to serve

Steps

  1. Mix masa harina, warm water, and salt together to form a smooth dough.
  2. Divide the dough into portions and shape each into an oval, flattening to form the huarache base.
  3. Cook the masa ovals on a hot griddle or comal until lightly browned and cooked through on both sides.
  4. Season the beef steaks with garlic powder, salt, and pepper.
  5. Cook the steaks in lard or oil in a skillet until browned and cooked to desired doneness, then slice or chop.
  6. Spread warm refried beans over each cooked masa base.
  7. Top with the cooked beef, shredded lettuce, tomato slices, onion rings, queso fresco, and Mexican crema.
  8. Add avocado slices and top with red salsa before serving.
