Chayote and Egg Stir-fry

Ingredients
- 2 tablespoons oil
- 6 eggs, beaten
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 chayote, peeled and cut into 1/4 inch strips
- 1 packet (8 g) seasoning granules (e.g. Maggi Magic Sarap)
- pepper, to taste
Steps
- Heat 1 tablespoon oil in a wide pan. Add beaten eggs and cook, stirring occasionally, until set but still slightly wet. Remove and set aside.
- Add remaining 1 tablespoon oil to the pan. Add onions and cook until softened.
- Add garlic and cook until softened.
- Add chayote and stir to combine. Cover and cook, stirring occasionally, until tender-crisp.
- Season with seasoning granules and pepper; stir to combine.
- Add the scrambled eggs back in, breaking them apart as desired, and mix well.
