Chayote and Egg Stir-fry

Ingredients

  • 2 tablespoons oil
  • 6 eggs, beaten
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 chayote, peeled and cut into 1/4 inch strips
  • 1 packet (8 g) seasoning granules (e.g. Maggi Magic Sarap)
  • pepper, to taste

Steps

  1. Heat 1 tablespoon oil in a wide pan. Add beaten eggs and cook, stirring occasionally, until set but still slightly wet. Remove and set aside.
  2. Add remaining 1 tablespoon oil to the pan. Add onions and cook until softened.
  3. Add garlic and cook until softened.
  4. Add chayote and stir to combine. Cover and cook, stirring occasionally, until tender-crisp.
  5. Season with seasoning granules and pepper; stir to combine.
  6. Add the scrambled eggs back in, breaking them apart as desired, and mix well.
