Carne Enchilada (Mexican Chile-Marinated Pork)

Ingredients

  • 6 guajillo peppers
  • 1/2 tsp whole black peppercorns
  • 2 whole cloves
  • 1/4 tsp cumin seeds
  • 1/4 tsp coriander seeds
  • 1 inch cinnamon stick
  • 1/2 tsp Mexican oregano
  • 1/4 tsp thyme
  • 1 bay leaf
  • 1/4 cup white onion, chopped
  • 2 large garlic cloves
  • 1/3 cup apple cider vinegar
  • 1 1/2 tsp salt
  • 24 oz pork loin or pork butt, cut into 1/3-inch thick steaks
  • 1 large white onion, sliced

Steps

  1. Remove stems and seeds from guajillo peppers, then toast lightly in a dry pan.
  2. Toast the peppercorns, cloves, cumin seeds, coriander seeds, cinnamon stick, oregano, thyme, and bay leaf until fragrant.
  3. Blend the toasted chiles and spices with the chopped onion, garlic, vinegar, salt, and a little water until smooth.
  4. Strain the sauce to remove any solids.
  5. Place the pork steaks in a dish and coat with the sauce; marinate for at least 2 hours, or overnight in the refrigerator.
  6. Heat a skillet over medium-high heat and cook the marinated pork steaks with the sliced onion until the meat is cooked through and the onions are softened.
  7. Serve the pork hot with the cooked onions.
