Carne Enchilada (Mexican Chile-Marinated Pork)

Ingredients
- 6 guajillo peppers
- 1/2 tsp whole black peppercorns
- 2 whole cloves
- 1/4 tsp cumin seeds
- 1/4 tsp coriander seeds
- 1 inch cinnamon stick
- 1/2 tsp Mexican oregano
- 1/4 tsp thyme
- 1 bay leaf
- 1/4 cup white onion, chopped
- 2 large garlic cloves
- 1/3 cup apple cider vinegar
- 1 1/2 tsp salt
- 24 oz pork loin or pork butt, cut into 1/3-inch thick steaks
- 1 large white onion, sliced
Steps
- Remove stems and seeds from guajillo peppers, then toast lightly in a dry pan.
- Toast the peppercorns, cloves, cumin seeds, coriander seeds, cinnamon stick, oregano, thyme, and bay leaf until fragrant.
- Blend the toasted chiles and spices with the chopped onion, garlic, vinegar, salt, and a little water until smooth.
- Strain the sauce to remove any solids.
- Place the pork steaks in a dish and coat with the sauce; marinate for at least 2 hours, or overnight in the refrigerator.
- Heat a skillet over medium-high heat and cook the marinated pork steaks with the sliced onion until the meat is cooked through and the onions are softened.
- Serve the pork hot with the cooked onions.
