Blistered Romano Beans with Chile Butter

Ingredients

  • 1 garlic clove, finely grated
  • 4 tbsp unsalted butter, room temperature
  • 2 tsp chopped oil-packed Calabrian chiles
  • 1 lb Romano beans or other snap beans, trimmed
  • 1 tbsp vegetable oil
  • Kosher salt
  • Lemon wedges, for serving

Steps

  1. Heat broiler with a rack in the upper third of the oven.
  2. Stir together garlic, butter, Calabrian chiles, and a pinch of salt in a small bowl; set aside.
  3. Place beans on a large rimmed baking sheet, drizzle with oil, sprinkle with salt, and toss to coat.
  4. Spread beans out evenly and broil until blistered in spots, 5–9 minutes, watching closely as broiler strength varies.
  5. Remove beans from broiler and toss with 2 tablespoons of the garlic-chile butter to melt and coat.
  6. Transfer beans to a platter, top with remaining butter, and serve with lemon wedges.
