Lemon Blueberry Waffles with Maple Glaze

Ingredients
- 1 3/4 cups all-purpose flour
- 2 tablespoons cornstarch
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 2 teaspoons vanilla extract
- 1 tablespoon lemon zest, heaping
- 1/2 teaspoon baking soda
- 6 tablespoons salted butter, melted and cooled
- 1 cup whole milk, room temperature
- 1/2 cup sour cream, room temperature
- 2 large eggs, room temperature
- 1 cup blueberries, heaping
- 3 tablespoons melted butter (salted, or add a pinch of salt)
- 1 cup powdered sugar
- Pinch of cinnamon
- 2 tablespoons maple syrup
- 1 1/2 to 3 tablespoons milk
Steps
- Preheat the waffle iron according to manufacturer instructions.
- In a large bowl, whisk together flour, cornstarch, baking powder, and baking soda; set aside.
- In a separate bowl, whisk together sugar, lemon zest, vanilla extract, melted butter, milk, sour cream, and eggs.
- Pour the wet ingredients into the dry ingredients and mix with a spatula until about half the flour is incorporated.
- Gently fold in the blueberries until most flour pockets are gone; do not overmix, small lumps are fine.
- Grease the waffle iron with cooking spray or melted butter.
- Spoon about 1/4 cup of batter onto the iron and cook until golden and crisp, following manufacturer timing.
- Transfer cooked waffles to a wire rack while preparing the glaze.
- For the glaze, whisk together melted butter, powdered sugar, cinnamon, and maple syrup in a bowl.
- Add milk one tablespoon at a time, whisking until the glaze reaches a pourable consistency.
- Drizzle or dip slightly cooled waffles in the glaze, then let set on a wire rack a few minutes before serving.
- Serve with additional fresh blueberries on the side.
