Summer Panzanella Salad

Ingredients
- 3 cups cubed stale sourdough bread
- 4 cups fresh tomatoes, halved
- ½ cup olive oil, plus more
- 4 cloves garlic (3 smashed, 1 minced)
- 3 tablespoons grated parmesan cheese
- 1 teaspoon flaked sea salt
- 1 teaspoon sugar
- ¼ teaspoon dried oregano
- ¼ teaspoon black pepper
- 2 tablespoons red wine vinegar
- â…“ cup thinly sliced red onion
- 7-8 basil leaves, torn
- 1 hot house cucumber, seeded and sliced
- 2-3 cups fresh arugula
Steps
- Add ¼ cup olive oil and the 3 smashed garlic cloves to a cold pan; heat over low until the garlic sizzles.
- Add the bread, increase heat to medium, and spray with cooking spray, tossing to coat evenly.
- Sauté the bread 9-12 minutes, tossing often, until crispy and golden; discard garlic if it browns too much.
- Sprinkle parmesan over the bread and cook 1-2 minutes more until it adheres. Remove and let cool completely.
- In a bowl, combine tomatoes, remaining ¼ cup olive oil, red wine vinegar, minced garlic, oregano, sugar, black pepper, and sea salt.
- Let the tomato mixture marinate at least 15 minutes, then taste and adjust seasoning.
- Add the cooled bread, red onion, cucumber, and basil to the tomatoes; toss well.
- Add the arugula, toss again, adjust salt if needed, and serve immediately.
