Grilled Halloumi Watermelon Salad with Hot Honey Dressing

Ingredients
- 2 tablespoons lime juice
- 1-2 tablespoons hot honey
- Pinch of kosher salt
- 1/4 cup fresh mint, divided
- 8-10 ounces halloumi cheese, chopped
- Olive oil, for brushing
- 1 small seedless watermelon
- 2 Persian cucumbers, thinly sliced
- 1/4 cup red onion, thinly sliced
Steps
- Remove the rind from the watermelon and cut the flesh into large chunks or triangles.
- In a bowl, mix kosher salt, lime juice, and 1 tablespoon hot honey.
- Mince half of the mint leaves and add to the dressing; whisk to combine.
- Taste the dressing and add the remaining tablespoon of hot honey if the watermelon isn't very sweet. Set aside.
- Preheat an indoor grill pan or outdoor grill over medium heat and clean the grates.
- Slice halloumi into 1/2-inch thick pieces and brush with olive oil.
- Grill halloumi for 2-3 minutes per side until grill marks form, then remove to a plate.
- Once cooled, cut halloumi into smaller bite-sized pieces if desired.
- Arrange half of the watermelon on a platter, then top with cucumbers, red onions, and halloumi.
- Add the remaining watermelon and the rest of the mint leaves on top.
- Drizzle the dressing over the salad before serving.
Notes
Halloumi cheese originates from Cyprus, giving this salad its Mediterranean character despite the modern fusion presentation.
