Grilled Halloumi Watermelon Salad with Hot Honey Dressing

🇨🇾 Cyprus

Prep: 15 minutes Cook: 5 minutes Total: 20 minutes

Ingredients

  • 2 tablespoons lime juice
  • 1-2 tablespoons hot honey
  • Pinch of kosher salt
  • 1/4 cup fresh mint, divided
  • 8-10 ounces halloumi cheese, chopped
  • Olive oil, for brushing
  • 1 small seedless watermelon
  • 2 Persian cucumbers, thinly sliced
  • 1/4 cup red onion, thinly sliced

Steps

  1. Remove the rind from the watermelon and cut the flesh into large chunks or triangles.
  2. In a bowl, mix kosher salt, lime juice, and 1 tablespoon hot honey.
  3. Mince half of the mint leaves and add to the dressing; whisk to combine.
  4. Taste the dressing and add the remaining tablespoon of hot honey if the watermelon isn't very sweet. Set aside.
  5. Preheat an indoor grill pan or outdoor grill over medium heat and clean the grates.
  6. Slice halloumi into 1/2-inch thick pieces and brush with olive oil.
  7. Grill halloumi for 2-3 minutes per side until grill marks form, then remove to a plate.
  8. Once cooled, cut halloumi into smaller bite-sized pieces if desired.
  9. Arrange half of the watermelon on a platter, then top with cucumbers, red onions, and halloumi.
  10. Add the remaining watermelon and the rest of the mint leaves on top.
  11. Drizzle the dressing over the salad before serving.

Notes

Halloumi cheese originates from Cyprus, giving this salad its Mediterranean character despite the modern fusion presentation.
