2-Minute Caesar Salad Dressing

Ingredients
- 1-2 cloves garlic
- 1 ½ teaspoons anchovy paste (or Asian fish sauce)
- 1 teaspoon Worcestershire sauce
- ¼ cup grated parmesan cheese
- 3-4 tablespoons lemon juice
- 2 egg yolks
- 1 teaspoon Dijon mustard
- ½ cup oil (canola, vegetable, avocado, or olive)
- 3 tablespoons mayonnaise
- ½ teaspoon salt
- ¼ teaspoon black pepper
Steps
- Place all ingredients in a mason jar or blender.
- Blend with an immersion blender or in a regular blender until the dressing emulsifies and is smooth.
- Taste and adjust seasoning with more lemon juice, salt, or pepper as needed.
- If the dressing is too thick, thin it out by adding water one tablespoon at a time until desired consistency is reached.
Notes
Caesar salad and its dressing were invented by Italian immigrant chef Caesar Cardini in Tijuana, Mexico.
