2-Minute Caesar Salad Dressing

Ingredients

  • 1-2 cloves garlic
  • 1 ½ teaspoons anchovy paste (or Asian fish sauce)
  • 1 teaspoon Worcestershire sauce
  • ¼ cup grated parmesan cheese
  • 3-4 tablespoons lemon juice
  • 2 egg yolks
  • 1 teaspoon Dijon mustard
  • ½ cup oil (canola, vegetable, avocado, or olive)
  • 3 tablespoons mayonnaise
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Steps

  1. Place all ingredients in a mason jar or blender.
  2. Blend with an immersion blender or in a regular blender until the dressing emulsifies and is smooth.
  3. Taste and adjust seasoning with more lemon juice, salt, or pepper as needed.
  4. If the dressing is too thick, thin it out by adding water one tablespoon at a time until desired consistency is reached.

Caesar salad and its dressing were invented by Italian immigrant chef Caesar Cardini in Tijuana, Mexico.
