Homemade Nutella

Ingredients
- 8 ounces hazelnuts
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon kosher salt
- 1/3-1/2 cup powdered sugar
- 3 tablespoons cocoa powder
- 6 ounces semisweet chocolate
- 1 tablespoon oil
Steps
- Preheat oven to 350°F.
- Spread hazelnuts on a baking tray and bake 10-12 minutes until lightly browned, tossing once halfway through. Let cool 10 minutes.
- Rub hazelnuts in a towel to loosen and remove skins (some skin may remain).
- Melt chocolate in microwave in 20-second increments, stirring between each, until smooth.
- Process hazelnuts in a food processor for 2-3 minutes until a smooth, glossy paste forms.
- Add vanilla, salt, cocoa powder, melted chocolate, and powdered sugar (1/3 cup for less sweet, 1/2 cup for sweeter) to the processor.
- Run the processor 1 1/2-2 minutes, slowly drizzling in the oil through the feed opening. Mixture will be runny but thickens as it cools.
- Transfer to a jar or resealable container. Store at room temperature for up to 1 month.
