Carne Asada

Ingredients
- 2-2 1/2 lbs flank or skirt steak
- 1/4 cup fresh lime juice
- 1/4 cup fresh orange juice
- 1/4 cup low sodium soy sauce
- 10 cloves garlic, minced
- 3 tablespoons high heat oil
- 2 teaspoons ground cumin
- 2 teaspoons dried Mexican oregano
- 2 teaspoons chipotle chili powder
- 1/2 teaspoon kosher salt
- 1/2 cup cilantro, leaves and stems
- 1 large onion, cut into 8 pieces
Steps
- In a bowl, whisk together lime juice, orange juice, soy sauce, garlic, oil, cumin, oregano, chipotle chili powder, and salt.
- Pour the marinade into a large dish or zip-top bag; add the cilantro and onion pieces.
- Add the steak to the marinade, turning to coat both sides.
- Cover and refrigerate for at least 2 hours and up to 10 hours.
- Remove the steak from the fridge about 30 minutes before grilling.
- Preheat grill to medium-high heat (450-475°F) and clean and oil the grates.
- Remove the steak from the marinade and discard the marinade.
- Grill the steak 3-5 minutes per side until it reaches desired doneness.
- Let the meat rest 5-7 minutes, then slice against the grain and serve.
