Mexican Hot Dogs with Charred Serranos

Ingredients
- ½ cup white onion, chopped
- 2 roma tomatoes, chopped
- 2 tablespoons jalapeños, chopped
- 2 tablespoons jalapeño juice
- ½ teaspoon kosher salt
- 4 serrano peppers, sliced down the center
- 4 hot dogs
- 4 hot dog buns, toasted or steamed
- Mayonnaise, for serving
- Ketchup, for serving
- Mustard, for serving
- Chopped cilantro, for serving
Steps
- Make the salsa: combine chopped onion, tomatoes, and jalapeños in a bowl. Drizzle with jalapeño juice, add kosher salt, stir, and taste, adjusting salt as needed.
- If desired, slash, scale, crosshatch, or spiral cut the hot dogs (optional).
- Heat a grill pan or skillet over medium-high heat and lightly grease it.
- Place the sliced serrano peppers on one side of the pan.
- Add the hot dogs to the other side of the pan in a single layer.
- Cook everything for 3-5 minutes, flipping every 45-60 seconds, until the hot dogs are browned and the serranos are charred.
- Remove the serranos to a plate as they finish charring.
- Spread mayonnaise on the toasted or steamed buns.
- Nestle a hot dog into each bun.
- Top with the prepared salsa, and drizzle with ketchup and mustard as desired.
- Add the charred sliced serranos and sprinkle with chopped cilantro.
- Serve warm.
