Creamy Cajun Potato Soup

Ingredients

  • 5 Yukon gold potatoes, peeled and cut into chunks
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • 2 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 ring (13.5 ounces) andouille sausage, sliced into 1/4-inch rounds
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning, or to taste
  • Shredded cheddar cheese, for garnish
  • Sliced green onions, for garnish

Steps

  1. Place potato chunks in a microwave-safe bowl with 2-3 tablespoons water. Cover loosely and microwave on high, stirring occasionally, until nearly tender, about 5-8 minutes. Set aside.
  2. In a large stock pot, heat butter and olive oil over medium heat. Add onion, celery, and bell pepper, and sauté 4-5 minutes until onion is translucent.
  3. Stir in garlic and cook 1 minute.
  4. Add sliced andouille sausage and cook 4-5 minutes, stirring occasionally, until slightly browned.
  5. Pour in broth and bring to a simmer. Add the pre-cooked potatoes and cook 12-15 minutes until fully tender.
  6. Reduce heat to low. Stir in heavy cream and season with Cajun seasoning to taste. Heat through without boiling.
  7. Ladle soup into bowls and garnish with shredded cheddar cheese and sliced green onions. Serve immediately.
