Creamy Cajun Potato Soup

Ingredients
- 5 Yukon gold potatoes, peeled and cut into chunks
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 yellow onion, chopped
- 2 stalks celery, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 ring (13.5 ounces) andouille sausage, sliced into 1/4-inch rounds
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 teaspoon Cajun seasoning, or to taste
- Shredded cheddar cheese, for garnish
- Sliced green onions, for garnish
Steps
- Place potato chunks in a microwave-safe bowl with 2-3 tablespoons water. Cover loosely and microwave on high, stirring occasionally, until nearly tender, about 5-8 minutes. Set aside.
- In a large stock pot, heat butter and olive oil over medium heat. Add onion, celery, and bell pepper, and sauté 4-5 minutes until onion is translucent.
- Stir in garlic and cook 1 minute.
- Add sliced andouille sausage and cook 4-5 minutes, stirring occasionally, until slightly browned.
- Pour in broth and bring to a simmer. Add the pre-cooked potatoes and cook 12-15 minutes until fully tender.
- Reduce heat to low. Stir in heavy cream and season with Cajun seasoning to taste. Heat through without boiling.
- Ladle soup into bowls and garnish with shredded cheddar cheese and sliced green onions. Serve immediately.
