Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 4 cups quick-cooking oats
  • 1 1/2 cups semisweet chocolate chips
  • 3/4 cup creamy peanut butter

Steps

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan or line with parchment paper.
  2. Melt butter in a large saucepan over medium heat. Stir in brown sugar, corn syrup, and vanilla, and cook until bubbling.
  3. Remove from heat and stir in the oats.
  4. Press the mixture evenly into the prepared pan and bake for 15 minutes.
  5. Meanwhile, melt chocolate chips and peanut butter together in the microwave in 30-second increments, stirring until smooth (or melt over low heat on the stovetop).
  6. Pour the chocolate-peanut butter mixture over the warm oatmeal base and spread evenly.
  7. Let cool at room temperature, then refrigerate for at least 1 hour.
  8. Slice into squares and serve.
