Lasagna Roll Ups

🇮🇹 Italy

Servings: 12 servings Prep: 25 minutes Cook: 40 minutes Total: 1 hour 5 minutes

Ingredients

  • 12 lasagna noodles
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces ground beef
  • 8 ounces Italian sausage, casings removed
  • 1 (24-ounce) jar marinara sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 teaspoons dried Italian seasoning, divided
  • 1 large egg
  • 1 1/2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley, plus more for garnish

Steps

  1. Boil salted water and cook lasagna noodles until al dente, 8-10 minutes. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat and saute onion and garlic for about 3 minutes.
  3. Add ground beef and Italian sausage, breaking them up with a spoon, and cook until browned, 6-8 minutes. Drain excess fat.
  4. Stir in 1 cup marinara sauce, salt, pepper, and 1/2 teaspoon Italian seasoning. Bring to a boil, reduce heat, and simmer 10 minutes.
  5. Preheat oven to 375°F (190°C).
  6. Whisk together ricotta, 1 cup mozzarella, Parmesan, 1/2 teaspoon Italian seasoning, 1 tablespoon parsley, salt, and pepper in a bowl.
  7. Spread 1/2 cup marinara sauce in the bottom of a 9x13-inch baking dish.
  8. Lay noodles flat and spread an even layer of cheese mixture on each, leaving a small border at the end. Top with 1-2 tablespoons of meat sauce.
  9. Roll each noodle from the filled end to enclose the filling and place seam-side down in the baking dish.
  10. Pour remaining marinara sauce evenly over the roll ups and sprinkle with remaining 1/2 cup mozzarella.
  11. Cover loosely with foil and bake 25 minutes. Remove foil and bake an additional 10-15 minutes until cheese is melted and bubbly.
  12. Let rest 5 minutes before serving. Garnish with parsley and serve.
