Lasagna Roll Ups

Ingredients
- 12 lasagna noodles
- 1 tablespoon olive oil
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces ground beef
- 8 ounces Italian sausage, casings removed
- 1 (24-ounce) jar marinara sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 teaspoons dried Italian seasoning, divided
- 1 large egg
- 1 1/2 cups ricotta cheese
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley, plus more for garnish
Steps
- Boil salted water and cook lasagna noodles until al dente, 8-10 minutes. Drain and set aside.
- Heat olive oil in a skillet over medium heat and saute onion and garlic for about 3 minutes.
- Add ground beef and Italian sausage, breaking them up with a spoon, and cook until browned, 6-8 minutes. Drain excess fat.
- Stir in 1 cup marinara sauce, salt, pepper, and 1/2 teaspoon Italian seasoning. Bring to a boil, reduce heat, and simmer 10 minutes.
- Preheat oven to 375°F (190°C).
- Whisk together ricotta, 1 cup mozzarella, Parmesan, 1/2 teaspoon Italian seasoning, 1 tablespoon parsley, salt, and pepper in a bowl.
- Spread 1/2 cup marinara sauce in the bottom of a 9x13-inch baking dish.
- Lay noodles flat and spread an even layer of cheese mixture on each, leaving a small border at the end. Top with 1-2 tablespoons of meat sauce.
- Roll each noodle from the filled end to enclose the filling and place seam-side down in the baking dish.
- Pour remaining marinara sauce evenly over the roll ups and sprinkle with remaining 1/2 cup mozzarella.
- Cover loosely with foil and bake 25 minutes. Remove foil and bake an additional 10-15 minutes until cheese is melted and bubbly.
- Let rest 5 minutes before serving. Garnish with parsley and serve.
