Pumpkin Cream Cheese Muffins

Ingredients
- 1 cup white sugar
- 2 eggs
- 3/4 cup oil
- 1 1/2 cups pumpkin puree (15 oz can)
- 2 cups all-purpose flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground cloves
- 2 teaspoons pumpkin pie spice
- pinch cardamom (optional)
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 8 ounces cream cheese
- 1/4 cup white sugar
- 1 tablespoon all-purpose flour
- 1/2 teaspoon vanilla extract
- 1 teaspoon milk
- chopped walnuts or pecans (optional)
- pepitas (pumpkin seeds, optional)
Steps
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or grease with butter.
- In a medium bowl, beat cream cheese, 1/4 cup sugar, 1 tablespoon flour, vanilla extract, and milk until smooth. Spoon into a piping bag and set aside.
- In a large bowl, whisk pumpkin puree with eggs, oil, and 1 cup sugar.
- In a separate bowl, sift together flour, cinnamon, nutmeg, cloves, pumpkin pie spice, cardamom (if using), salt, baking soda, and baking powder.
- Add the dry mixture to the wet mixture and gently stir until just combined, with no flour streaks remaining.
- Spoon about 1/4 cup of batter into each muffin liner.
- Pipe 1-2 tablespoons of cream cheese filling into the center of each muffin, then top with nuts or pepitas if desired.
- Bake for 20-25 minutes, or until a toothpick inserted at the side comes out clean.
- Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Serve.
