Cranberry Bliss Bars

Ingredients
- 1 cup butter, melted
- 1 1/2 cups brown sugar
- 2 eggs, room temperature
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup white chocolate chips
- 3/4 cup dried cranberries, roughly chopped
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/3 cup dried cranberries, chopped
- 1/2 cup white chocolate, melted for drizzling
Steps
- Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving overhang on the sides.
- Beat melted butter and brown sugar together until combined. Whisk in eggs and vanilla until smooth.
- In a separate bowl, sift together flour, baking powder, and salt. Add to the wet mixture and mix until just combined.
- Fold in white chocolate chips and chopped cranberries.
- Spread batter evenly into the prepared pan. Bake 20-22 minutes, until a toothpick inserted in the center comes out clean. Cool completely in the pan.
- Beat cream cheese until smooth. Add powdered sugar and vanilla, and beat until light and fluffy.
- Spread frosting evenly over the cooled bars.
- Top with chopped cranberries and drizzle with melted white chocolate.
- Lift bars out of the pan using the parchment overhang and cut into 24 squares.
