Cranberry Bliss Bars

Ingredients

  • 1 cup butter, melted
  • 1 1/2 cups brown sugar
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 3/4 cup dried cranberries, roughly chopped
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/3 cup dried cranberries, chopped
  • 1/2 cup white chocolate, melted for drizzling

Steps

  1. Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving overhang on the sides.
  2. Beat melted butter and brown sugar together until combined. Whisk in eggs and vanilla until smooth.
  3. In a separate bowl, sift together flour, baking powder, and salt. Add to the wet mixture and mix until just combined.
  4. Fold in white chocolate chips and chopped cranberries.
  5. Spread batter evenly into the prepared pan. Bake 20-22 minutes, until a toothpick inserted in the center comes out clean. Cool completely in the pan.
  6. Beat cream cheese until smooth. Add powdered sugar and vanilla, and beat until light and fluffy.
  7. Spread frosting evenly over the cooled bars.
  8. Top with chopped cranberries and drizzle with melted white chocolate.
  9. Lift bars out of the pan using the parchment overhang and cut into 24 squares.
