Southern Pecan Pralines

Ingredients

  • 1 1/2 cups granulated sugar
  • 1 1/2 cups packed light brown sugar
  • 3/4 cup heavy whipping cream
  • 6 tablespoons unsalted butter
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda, optional
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves

Steps

  1. Line a large baking sheet with parchment paper.
  2. In a heavy-bottomed saucepan, combine granulated sugar, brown sugar, cream, butter, and salt. Warm over medium heat, stirring constantly, until boiling.
  3. Attach a candy thermometer and continue cooking, stirring, until mixture reaches 236°F (soft ball stage), about 6-8 minutes.
  4. Remove from heat and quickly stir in baking soda (if using) and vanilla; mixture may foam.
  5. Stir in pecans until evenly coated.
  6. Drop tablespoon-sized portions onto the prepared baking sheet, spacing about 2 inches apart.
  7. Let pralines cool and set at room temperature for 30-60 minutes before serving.
