Homemade Churros

Ingredients

  • 1 cup water
  • 1/4 cup unsalted butter
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Steps

  1. Combine water, butter, salt, and sugar in a medium saucepan. Bring to a boil over medium heat.
  2. Reduce heat to low and add the flour, stirring vigorously until the mixture forms a ball, about 1 minute. Remove from heat and let dough cool for a few minutes.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Heat about 2 inches of vegetable oil in a large, heavy-bottomed pot to 350°F (175°C).
  5. Transfer the dough to a piping bag fitted with a large star tip. Pipe strips of dough into the hot oil, cutting them to the desired length with scissors.
  6. Fry the churros, turning once, until golden brown on all sides, about 2-3 minutes per batch. Avoid overcrowding the pot. Drain on paper towels.
  7. Combine sugar and cinnamon in a shallow dish.
  8. Roll the hot, drained churros in the cinnamon sugar mixture until well coated.
  9. Serve immediately.
