Homemade Churros

Ingredients
- 1 cup water
- 1/4 cup unsalted butter
- 1/4 teaspoon salt
- 2 tablespoons granulated sugar
- 1 cup all-purpose flour
- 3 large eggs
- 1 teaspoon vanilla extract
- Vegetable oil, for frying
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Steps
- Combine water, butter, salt, and sugar in a medium saucepan. Bring to a boil over medium heat.
- Reduce heat to low and add the flour, stirring vigorously until the mixture forms a ball, about 1 minute. Remove from heat and let dough cool for a few minutes.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Heat about 2 inches of vegetable oil in a large, heavy-bottomed pot to 350°F (175°C).
- Transfer the dough to a piping bag fitted with a large star tip. Pipe strips of dough into the hot oil, cutting them to the desired length with scissors.
- Fry the churros, turning once, until golden brown on all sides, about 2-3 minutes per batch. Avoid overcrowding the pot. Drain on paper towels.
- Combine sugar and cinnamon in a shallow dish.
- Roll the hot, drained churros in the cinnamon sugar mixture until well coated.
- Serve immediately.
