Ingredients
- 6 cups water
- 1 onion, sliced thinly
- 1 clove garlic, pounded
- 1/2 pound small head-on shrimp, peeled and pounded
- 1/2 small calabasa (squash), cut into 1-inch cubes
- 1 bunch sitaw (string beans), cut into 3-inch lengths
- 2 medium eggplants, cut into 1-inch chunks on a bias
- 2 medium ampalaya (bitter melon), seeded and sliced 1/2-inch thick
- 6 pieces okra, cut in half on a bias
- 1 large patola (sponge gourd), peeled and cut into 1/2-inch rounds
- salt and pepper to taste
Steps
- In a pot over medium heat, combine water, onion, and garlic. Bring to a boil and cook until onions soften.
- Add shrimp and calabasa; cook 3 to 5 minutes until shrimp changes color and squash is half-cooked.
- Add sitaw and cook 2 to 3 minutes.
- Add eggplant, ampalaya, and okra; cook 2 to 3 minutes.
- Add patola and cook 1 to 2 minutes until vegetables are tender but still crisp.
- Season with salt and pepper to taste. Serve hot.
