Ingredients

  • 6 cups water
  • 1 onion, sliced thinly
  • 1 clove garlic, pounded
  • 1/2 pound small head-on shrimp, peeled and pounded
  • 1/2 small calabasa (squash), cut into 1-inch cubes
  • 1 bunch sitaw (string beans), cut into 3-inch lengths
  • 2 medium eggplants, cut into 1-inch chunks on a bias
  • 2 medium ampalaya (bitter melon), seeded and sliced 1/2-inch thick
  • 6 pieces okra, cut in half on a bias
  • 1 large patola (sponge gourd), peeled and cut into 1/2-inch rounds
  • salt and pepper to taste

Steps

  1. In a pot over medium heat, combine water, onion, and garlic. Bring to a boil and cook until onions soften.
  2. Add shrimp and calabasa; cook 3 to 5 minutes until shrimp changes color and squash is half-cooked.
  3. Add sitaw and cook 2 to 3 minutes.
  4. Add eggplant, ampalaya, and okra; cook 2 to 3 minutes.
  5. Add patola and cook 1 to 2 minutes until vegetables are tender but still crisp.
  6. Season with salt and pepper to taste. Serve hot.
