Crockpot Taco Soup

Ingredients

  • 1 lb ground beef (or shredded chicken)
  • 1 (16 oz) can pinto beans
  • 1 (16 oz) can white beans or kidney beans
  • 1 (11 oz) can corn
  • 1 (11 oz) can tomatoes and green chiles
  • 1 (28 oz) can diced tomatoes
  • 1 (4 oz) can diced green chiles
  • 1 1/4 envelopes taco seasoning mix
  • 1 envelope ranch dressing and seasoning mix

Steps

  1. Brown the meat in a pan until fully cooked, then drain excess liquid.
  2. Add the meat, beans, corn, tomatoes, chiles, taco seasoning, and ranch seasoning to a slow cooker, including the liquid from the cans.
  3. Stir well to combine.
  4. Cook on high for 2 hours or on low for 4 to 6 hours.
  5. Serve with your favorite toppings.

Notes

Do not drain the canned ingredients; the liquid helps build the soup's flavor.
