Crockpot White Chicken Chili

Ingredients

  • 1 1/4 pounds boneless, skinless chicken breast
  • 2 (15 oz) cans great Northern beans, drained and rinsed
  • 1 (15 oz) can white corn, drained
  • 1 (14 oz) can chicken broth
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (4 oz) can chopped green chile peppers
  • 1 (1.25 oz) packet taco seasoning
  • 1/2 cup sour cream
  • 1/2 cup shredded pepper Jack cheese

Steps

  1. Layer beans and corn in the bottom of the slow cooker. Place chicken on top.
  2. In a bowl, mix chicken broth, cream of chicken soup, green chile peppers, and taco seasoning. Pour over the chicken.
  3. Cover and cook on low for 8 hours, until chicken reaches 165°F internally.
  4. Shred the cooked chicken with two forks.
  5. Stir in sour cream and shredded cheese; let cheese melt for 3-5 minutes.
  6. Serve in bowls, with cornbread if desired.
