Crockpot White Chicken Chili

Ingredients
- 1 1/4 pounds boneless, skinless chicken breast
- 2 (15 oz) cans great Northern beans, drained and rinsed
- 1 (15 oz) can white corn, drained
- 1 (14 oz) can chicken broth
- 1 (10.5 oz) can cream of chicken soup
- 1 (4 oz) can chopped green chile peppers
- 1 (1.25 oz) packet taco seasoning
- 1/2 cup sour cream
- 1/2 cup shredded pepper Jack cheese
Steps
- Layer beans and corn in the bottom of the slow cooker. Place chicken on top.
- In a bowl, mix chicken broth, cream of chicken soup, green chile peppers, and taco seasoning. Pour over the chicken.
- Cover and cook on low for 8 hours, until chicken reaches 165°F internally.
- Shred the cooked chicken with two forks.
- Stir in sour cream and shredded cheese; let cheese melt for 3-5 minutes.
- Serve in bowls, with cornbread if desired.
