Crockpot Olive Garden Chicken Pasta

Ingredients

  • 1.5-2 lbs boneless, skinless chicken breasts
  • 1 (16 oz) bottle Italian dressing
  • 1/2 cup grated Parmesan cheese, divided
  • 1/2 tsp black pepper
  • 4 cloves garlic, minced
  • 1 (8 oz) block cream cheese, cubed
  • 16 oz penne pasta

Steps

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Mix Italian dressing, 1/4 cup Parmesan, black pepper, and garlic in a bowl. Pour over the chicken.
  3. Sprinkle cream cheese cubes on top.
  4. Cover and cook on high for 4 hours or low for 6 hours, until chicken is tender.
  5. Cook penne according to package directions until al dente. Drain, reserving 1 cup pasta water.
  6. Shred the chicken in the slow cooker with two forks, mixing it into the sauce.
  7. Add the cooked penne to the slow cooker and stir to coat. Add reserved pasta water as needed to reach desired sauce consistency.
  8. Serve warm, topped with remaining Parmesan cheese.
