Old Fashioned Beef Stew

Ingredients

  • 2 pounds beef chuck roast, cubed
  • salt and black pepper, to taste
  • 3 tablespoons vegetable oil
  • 1/2 cup red wine
  • 4 cups low-sodium beef broth
  • 1-2 teaspoons Worcestershire sauce
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 1/2 teaspoon ground black pepper
  • 3 large potatoes, peeled and cubed
  • 4 carrots, cut into 1-inch pieces
  • 4 stalks celery, cut into 1-inch pieces
  • 1 large onion, chopped
  • 2 teaspoons cornstarch
  • 2 teaspoons cold water

Steps

  1. Season beef cubes generously with salt and black pepper.
  2. Heat vegetable oil in a large Dutch oven over medium-high heat. Sear beef in batches until browned on all sides, then transfer to a plate.
  3. Add red wine to the empty pot and deglaze, scraping up browned bits from the bottom.
  4. Pour in beef broth and Worcestershire sauce. Return beef to the pot and add rosemary, parsley, and remaining black pepper.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour.
  6. Meanwhile, peel and cube potatoes, cut carrots and celery into 1-inch pieces, and chop the onion.
  7. Combine cornstarch and cold water in a small bowl until smooth.
  8. After 1 hour, add the vegetables and cornstarch slurry to the pot. Stir to combine.
  9. Cover and simmer for another hour, until vegetables and meat are tender, stirring occasionally to prevent sticking.
  10. Adjust seasoning with salt and pepper if needed, then serve.
