Greek Lentil Soup (Fakes)

Ingredients
- 1½ cups (300g) brown lentils
- ¾ cup (120g) red onion, minced
- 3-4 garlic cloves, finely chopped
- 1 dried bay leaf
- ¼ cup (60ml) extra virgin olive oil
- 4 cups (1 liter) hot water or stock
- salt, to taste
- ground pepper, to taste
- red wine vinegar, for serving
Steps
- Rinse the lentils under cold water; soak briefly if desired to reduce cooking time.
- Place lentils, bay leaf, and hot water or stock in a large pot.
- Bring to a boil, then reduce heat and simmer uncovered for about 20 minutes.
- Add the minced onion, garlic, and olive oil to the pot.
- Continue simmering for another 30-40 minutes, until the lentils are soft and the soup has thickened.
- Season with salt and pepper to taste.
- Remove the bay leaf before serving.
- Serve hot, drizzled with red wine vinegar.
Notes
Using more olive oil (up to â…“ cup) will result in a thicker, richer soup, as is traditional in some Greek households.
