Vegan Blueberry Muffins

Ingredients
- 1 heaped cup oat flour
- 1 cup gluten-free flour blend (or regular flour)
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 3/4 cup plant-based milk
- 1 tbsp lemon juice
- 1/3 cup maple syrup
- 2 1/2 tbsp oil
- 1 1/2 tsp vanilla extract
- 1 1/2 cups blueberries, fresh or frozen
Steps
- Preheat oven to 360°F (180°C) and line a muffin pan with paper liners or grease it.
- Mix plant-based milk and lemon juice in a small bowl; set aside a few minutes to curdle into vegan buttermilk.
- In a large bowl, whisk together the oat flour, gluten-free flour blend, baking powder, baking soda, and salt.
- Add the buttermilk mixture, maple syrup, oil, and vanilla extract to the dry ingredients. Stir gently until just combined, without overmixing.
- Fold in the blueberries.
- Divide the batter evenly among 8 muffin cups.
- Bake for 25-30 minutes, until cracks form on top or a toothpick inserted in the center comes out clean.
- Let muffins cool before serving. Store leftovers in an airtight container in the fridge up to 5-6 days or freeze up to 3 months.
Notes
Muffins may firm up in the fridge; reheat in the oven to soften again.
