Vegetable Pakora

Ingredients
- 1 medium onion, diced or thinly sliced
- 1 medium carrot, grated
- 3/4 cup cabbage, shredded
- 1/2 bell pepper, diced
- 1 hot chili pepper, finely chopped
- 1/2 tbsp fresh ginger, grated
- 1/4 cup cilantro or parsley, chopped
- 1 cup chickpea flour
- 3 tbsp rice flour
- 3/4-1 tsp salt
- 1/2 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/2 tsp mild chili powder
- 1/2 cup water
- Oil, for frying
Steps
- Thinly slice the onion, shred the cabbage, grate the carrot, dice the bell pepper, mince the ginger and chili, and chop the cilantro. Add all to a large bowl.
- Add the chickpea flour, rice flour, salt, cumin, turmeric, chili powder, and water. Mix well to combine into a batter.
- Let the batter sit for a few minutes so the vegetables release liquid and the batter reaches the right consistency.
- Heat at least 1 1/2 tablespoons of oil in a large frying pan over medium heat.
- Drop small portions of the battered vegetables into the hot pan, cooking about 4 fritters at a time.
- Fry the pakoras for 2-4 minutes per side until golden and crispy.
- Transfer to paper towels or a wire rack to drain. Repeat with remaining batter.
