Vegetable Pakora

Ingredients

  • 1 medium onion, diced or thinly sliced
  • 1 medium carrot, grated
  • 3/4 cup cabbage, shredded
  • 1/2 bell pepper, diced
  • 1 hot chili pepper, finely chopped
  • 1/2 tbsp fresh ginger, grated
  • 1/4 cup cilantro or parsley, chopped
  • 1 cup chickpea flour
  • 3 tbsp rice flour
  • 3/4-1 tsp salt
  • 1/2 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp mild chili powder
  • 1/2 cup water
  • Oil, for frying

Steps

  1. Thinly slice the onion, shred the cabbage, grate the carrot, dice the bell pepper, mince the ginger and chili, and chop the cilantro. Add all to a large bowl.
  2. Add the chickpea flour, rice flour, salt, cumin, turmeric, chili powder, and water. Mix well to combine into a batter.
  3. Let the batter sit for a few minutes so the vegetables release liquid and the batter reaches the right consistency.
  4. Heat at least 1 1/2 tablespoons of oil in a large frying pan over medium heat.
  5. Drop small portions of the battered vegetables into the hot pan, cooking about 4 fritters at a time.
  6. Fry the pakoras for 2-4 minutes per side until golden and crispy.
  7. Transfer to paper towels or a wire rack to drain. Repeat with remaining batter.
