Vermicelli Noodles Stir-Fry

Ingredients
- 7 oz vermicelli noodles
- 2 tsp sesame oil
- 1/2 Tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 3.5 oz fresh shiitake mushrooms, chopped
- 1 medium carrot, sliced into fine sticks
- 1 medium red bell pepper, sliced into fine sticks
- 1 cup small broccoli florets
- 1 cup white cabbage, thinly sliced
- Green onion, to garnish
- Sesame seeds, to garnish
- 1 batch Korean BBQ sauce
Steps
- Prepare the vermicelli noodles according to package directions (or soak in hot water until tender), then drain.
- Mince the garlic and ginger, chop the mushrooms, cut the broccoli into small florets, and thinly slice the carrot, cabbage, and bell pepper.
- Heat the sesame oil in a large skillet or wok over medium heat. Add the ginger and garlic and sauté for 1 minute.
- Add the mushrooms, carrot, bell pepper, broccoli, and cabbage, and stir to combine.
- Cover the pan, reduce heat to low, and cook for 7-8 minutes until vegetables are tender but not mushy.
- Add the noodles and Korean BBQ sauce, and stir well to combine.
- Serve in bowls garnished with chopped green onion and sesame seeds.
Notes
Korean BBQ sauce or a Chinese stir-fry sauce can be used interchangeably.
