Vermicelli Noodles Stir-Fry

Ingredients

  • 7 oz vermicelli noodles
  • 2 tsp sesame oil
  • 1/2 Tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 3.5 oz fresh shiitake mushrooms, chopped
  • 1 medium carrot, sliced into fine sticks
  • 1 medium red bell pepper, sliced into fine sticks
  • 1 cup small broccoli florets
  • 1 cup white cabbage, thinly sliced
  • Green onion, to garnish
  • Sesame seeds, to garnish
  • 1 batch Korean BBQ sauce

Steps

  1. Prepare the vermicelli noodles according to package directions (or soak in hot water until tender), then drain.
  2. Mince the garlic and ginger, chop the mushrooms, cut the broccoli into small florets, and thinly slice the carrot, cabbage, and bell pepper.
  3. Heat the sesame oil in a large skillet or wok over medium heat. Add the ginger and garlic and sauté for 1 minute.
  4. Add the mushrooms, carrot, bell pepper, broccoli, and cabbage, and stir to combine.
  5. Cover the pan, reduce heat to low, and cook for 7-8 minutes until vegetables are tender but not mushy.
  6. Add the noodles and Korean BBQ sauce, and stir well to combine.
  7. Serve in bowls garnished with chopped green onion and sesame seeds.

Notes

Korean BBQ sauce or a Chinese stir-fry sauce can be used interchangeably.
