Air Fryer Falafel

Ingredients
- 2 cups dried chickpeas (not canned or cooked)
- 5 garlic cloves, chopped
- 1 small onion, chopped
- 1 cup parsley leaves, chopped
- 1/2 cup cilantro leaves, chopped
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1 1/2 tsp sea salt
- 1 tsp black pepper
- Red pepper flakes or cayenne pepper, to taste
- 1 tsp baking powder (optional)
- Cooking spray
Steps
- Soak dried chickpeas in a large bowl of water, covered by at least 3 inches, for 18-24 hours.
- Drain chickpeas well and pat dry with a paper towel if too wet.
- Add chickpeas and all other ingredients (except cooking spray) to a food processor.
- Process in bursts of about 20 seconds, scraping down the sides between blends, until well combined but not mushy.
- Refrigerate the mixture for 45-60 minutes.
- Scoop mixture and shape into balls or patties using your hands.
- Lightly spray the falafel balls and the air fryer basket with cooking spray.
- Preheat air fryer to 375°F (190°C) and cook falafel for 15 minutes, flipping halfway through, until crispy and browned.
- Serve hot on their own or in pita bread with tahini, lettuce, tomato, and cucumber.
Notes
Falafel mixture must be made from dried, soaked chickpeas, not canned or pre-cooked ones.
