Vegan Meatballs with Curry Gravy

Ingredients

  • 1 (15 oz) can black beans, drained and rinsed (250 g)
  • 1/4 cup sunflower seeds
  • 1/2 cup oats (gluten-free if needed)
  • 2 tbsp tomato paste
  • 2 cloves garlic
  • 1/2 large onion, chopped
  • 2 tbsp ground chia seeds (or flax seeds)
  • 1/2 tbsp onion powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes (optional)
  • Sea salt and pepper, to taste
  • Oil, for frying
  • 1 1/2 cups vegetable broth (or water)
  • 1/3 cup plant-based cream (or canned coconut milk)
  • 2 tbsp tomato paste
  • 1/2 tsp fresh ginger, minced
  • 3 tsp curry powder
  • 1 1/2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp turmeric (optional)
  • 1/2 tsp nutmeg
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes (optional)
  • 1 tsp coconut sugar (or brown sugar)
  • Sea salt and pepper, to taste
  • 1 tbsp cornstarch, to thicken
  • Fresh parsley, to garnish

Steps

  1. In a food processor, combine black beans, sunflower seeds, oats, tomato paste, garlic, onion, ground chia seeds, onion powder, garlic powder, oregano, cumin, smoked paprika, red pepper flakes, salt, and pepper.
  2. Pulse until the mixture is combined but still has some texture; avoid over-processing into a paste.
  3. Shape the mixture into small meatballs using your hands.
  4. Heat oil in a skillet over medium heat and fry the meatballs, turning occasionally, until browned and firm on all sides.
  5. Remove meatballs from the pan and set aside.
  6. In the same pan or a saucepan, whisk together vegetable broth, plant-based cream, tomato paste, ginger, curry powder, onion powder, garlic powder, oregano, cumin, turmeric, nutmeg, smoked paprika, red pepper flakes, coconut sugar, salt, and pepper.
  7. Bring the gravy mixture to a simmer over medium heat, stirring occasionally.
  8. Mix cornstarch with a small amount of water to make a slurry, then stir it into the simmering gravy to thicken.
  9. Return the fried meatballs to the gravy and simmer for a few minutes until heated through and coated.
  10. Garnish with fresh parsley and serve over mashed potatoes, rice, or pasta.

Notes
