Authentic Spanish Seafood Paella

Ingredients

  • 3 cloves garlic
  • 1/2 onion
  • 1/2 red bell pepper
  • 1 tube squid, cleaned
  • 12 raw jumbo shrimp, peeled and deveined
  • 8 fresh mussels, cleaned
  • 1/3 cup extra virgin olive oil
  • 1/2 cup tomato sauce
  • 1/2 tsp sweet smoked Spanish paprika
  • 2 1/2 cups fish broth
  • 1/4 tsp saffron threads or powder
  • 1 cup uncooked round rice
  • 2 lemon wedges
  • handful parsley, finely chopped
  • sea salt and black pepper

Steps

  1. Roughly chop the garlic, finely dice the onion, finely chop the bell pepper, and cut the squid into small squares.
  2. Heat olive oil in a paella pan over medium-high heat. Season with salt, add squid, and cook 1 1/2 to 2 minutes. Remove and set aside.
  3. Add onion and garlic to the pan, cook 1 minute, then add bell pepper and sauté until softened.
  4. Add tomato sauce, smoked paprika, salt, and pepper. Cook 2 minutes until sauce thickens.
  5. Return squid to the pan, then add fish broth and saffron. Bring to a boil.
  6. Stir in rice and distribute evenly. Cook 5-6 minutes, then add shrimp and mussels.
  7. Cook another 5 minutes, then lower heat and simmer until broth is absorbed.
  8. Increase heat briefly for 1-2 minutes to form socarrat (crispy bottom layer), then remove from heat and cover.
  9. Let rest covered for 5 minutes, then uncover and garnish with lemon wedges and parsley before serving.
