Homemade Snickers Ice Cream Bars

Ingredients
- 75 g cashews
- 120 g canned coconut milk
- 60 g maple syrup
- 14 g coconut oil (or cashew butter)
- 1 pinch salt
- 8 soft dates
- 8 tsp peanut butter
- Peanuts, chopped
- 1 (80 g) bar dark chocolate
Steps
- Soak cashews in cold water overnight, or boil 5-10 minutes if short on time, until soft. Drain well.
- Blend cashews, coconut milk, maple syrup, coconut oil, and salt in a high-speed blender until smooth and creamy, scraping sides as needed.
- Insert sticks into a popsicle mold and pour in enough mixture to cover the bottom of each mold.
- Wrap 1 date around each popsicle stick and add 1 tsp peanut butter and some chopped peanuts to each.
- Pour remaining ice cream mixture on top and freeze for 2-3 hours, or until solid.
- Chop and melt the chocolate in the microwave in short intervals, or use a double boiler. Stir in a little coconut oil if too thick.
- Dip each popsicle into the melted chocolate, sprinkle immediately with chopped peanuts, and place on a lined plate to set.
