Homemade Snickers Ice Cream Bars

Ingredients

  • 75 g cashews
  • 120 g canned coconut milk
  • 60 g maple syrup
  • 14 g coconut oil (or cashew butter)
  • 1 pinch salt
  • 8 soft dates
  • 8 tsp peanut butter
  • Peanuts, chopped
  • 1 (80 g) bar dark chocolate

Steps

  1. Soak cashews in cold water overnight, or boil 5-10 minutes if short on time, until soft. Drain well.
  2. Blend cashews, coconut milk, maple syrup, coconut oil, and salt in a high-speed blender until smooth and creamy, scraping sides as needed.
  3. Insert sticks into a popsicle mold and pour in enough mixture to cover the bottom of each mold.
  4. Wrap 1 date around each popsicle stick and add 1 tsp peanut butter and some chopped peanuts to each.
  5. Pour remaining ice cream mixture on top and freeze for 2-3 hours, or until solid.
  6. Chop and melt the chocolate in the microwave in short intervals, or use a double boiler. Stir in a little coconut oil if too thick.
  7. Dip each popsicle into the melted chocolate, sprinkle immediately with chopped peanuts, and place on a lined plate to set.
