Ensaladang Talbos ng Kamote (Sweet Potato Leaves Salad)

Ingredients

  • 1 bundle sweet potato (kamote) leaves
  • 1 large Roma tomato, diced
  • 2 shallots, peeled and thinly sliced
  • 1/4 cup vinegar
  • 2 cloves garlic, peeled and minced
  • 1 teaspoon fish sauce
  • 1 teaspoon canola or olive oil
  • 1/2 teaspoon sugar
  • salt and pepper, to taste

Steps

  1. Pick the kamote leaves from the stems, wash under cold running water, and drain well.
  2. Steam the leaves for 1 to 2 minutes until wilted, or briefly dip in boiling water for 10 to 20 seconds until wilted.
  3. Plunge the leaves into iced water for 30 to 40 seconds to stop cooking, then drain well.
  4. In a bowl, combine the kamote leaves, diced tomato, and sliced shallots.
  5. In a small bowl, whisk together vinegar, garlic, fish sauce, oil, sugar, salt, and pepper to make the dressing.
  6. Drizzle the dressing over the salad and gently toss to combine.
