Ensaladang Talbos ng Kamote (Sweet Potato Leaves Salad)

Ingredients
- 1 bundle sweet potato (kamote) leaves
- 1 large Roma tomato, diced
- 2 shallots, peeled and thinly sliced
- 1/4 cup vinegar
- 2 cloves garlic, peeled and minced
- 1 teaspoon fish sauce
- 1 teaspoon canola or olive oil
- 1/2 teaspoon sugar
- salt and pepper, to taste
Steps
- Pick the kamote leaves from the stems, wash under cold running water, and drain well.
- Steam the leaves for 1 to 2 minutes until wilted, or briefly dip in boiling water for 10 to 20 seconds until wilted.
- Plunge the leaves into iced water for 30 to 40 seconds to stop cooking, then drain well.
- In a bowl, combine the kamote leaves, diced tomato, and sliced shallots.
- In a small bowl, whisk together vinegar, garlic, fish sauce, oil, sugar, salt, and pepper to make the dressing.
- Drizzle the dressing over the salad and gently toss to combine.
