Crunchy Chocolate Quinoa Bars

Ingredients

  • 1/2 cup raw white quinoa, rinsed
  • 1 bar dark chocolate (about 70%)
  • 1/4 cup peanut butter (or other nut/seed butter)
  • 1 pinch salt (optional)

Steps

  1. Heat a dry skillet over medium heat.
  2. Toast the quinoa for 4-6 minutes, stirring frequently, until it smells nutty and some grains begin to pop. Watch closely to avoid burning.
  3. Melt the chocolate and nut butter together in the microwave (30-second intervals) or in a double boiler, stirring until smooth. Stir in salt if using.
  4. Add the toasted quinoa to the melted chocolate mixture and stir until evenly coated. If the mixture seems dry, add 1-2 more teaspoons of nut butter or a little coconut oil.
  5. Transfer the mixture to a parchment-lined small container or loaf pan. Press down firmly and smooth the top.
  6. Chill for 1-2 hours, or until fully set.
  7. Slice into squares or bars using a sharp knife, dipping it in hot water and wiping dry between cuts for cleaner slices.
